Mixing the Dough

Ready? Here we go.

(yields 3 medium or 4 personal pizzas)

  • Measure out 1 and 1/4 cup (about 250g) of warm water and pour into your mixing bowl.
  • Add 1/2 cup (120g) active sourdough starter
  • Add 3 cups (360g) all-purpose flour
  • Add 1/8 cup (20g) spelt flour
  • Add 1/8 cup (20g) brown rice flour
  • Add 1 teaspoon (8g) salt
  • Mix ingredients together by hand (or with a spatula, up to you)
  • Cover bowl and let dough rest for 1 hour
